Yields 10 people

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Cordial: Combine all the items into a saucepan, heat until it reaches a light boil, mixing so the sugar melts. Then, remove from the stove allowing it to cool down fully. Transfer into an sterilised bottle, close it and store in the fridge, it will last for around four weeks.

For the Cocktail Base: Mix all the liquid ingredients into a sizeable container, allow it to infuse for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml of your premix into your cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to chill. Filter to a frosted cocktail glass or similar, decorate with the cranberries and complete it with a quick spritz of the essential oil above the glass.
